Tomatoes

  • Most tomato recipes, other than long-simmered sauces, benefit from as much liquid as possible removed from the tomatoes prior to cooking.  The liquid slows the cooking process, resulting in less fresh flavor.
  • To remove tomato skin, boil some water, cut a small “x” in the bottom of the tomato, and place in the boiling water for 30 seconds to a minute.  Place in ice water to stop cooking, and skin should remove easily.
