Pineapple

  • To buy a ripe pineapple, check that the leaves pull out relatively easily and that it has a strong pineapple smell.
  • To chop a pineapple, cut off the top and bottom half-inch or so.  Standing the pineapple up the now-flat bottom, cut down eat side to remove the rind.  Quarter lengthwise by making two cuts from the top of the pineapple, remove the core from each quarter with a single diagonal cut, and chop each quarter as desired.
