Parsley

  • Flat-leaf (Italian) parsley is one of the most widely used herbs in cooking, and it is not the same as curly-leaf parsley.  Flat-leaf parsley, shockingly, has flat leaves.  Kind of looks like cilantro, so make sure you get the right one.
  • Though the stems are edible, an easy way to remove the leaves from a bunch of flat-leaf parsley is to hold the bunch in the air with one hand and quickly brush a sharp knife across it to shave off the leaves.
