Onions

  • To prevent crying from chopping onions, light a candle nearby.
  • To alleviate pain from crying from chopping onions, stick your face in the freezer for a few seconds.
  • The fastest way to roughly chop and onion is to first cut the ends off, then make a single cut into one end to separate into two halves.  Pull away the skin (and maybe the outer layer, if it's beat up), and place each half flat-side down on the cutting board.  With either flat end facing you, make several diagonal cuts from the perimeter of the onion toward the center, like spokes on a wheel.  Don't cut all the way to the center though, so that it stays in one piece.  Leaving the flat side down, rotate the onion 90 degrees.  From the top, make several cuts across the onion at your desired fineness.
  • To remove onion smell from your fingers, rub them on stainless steel, like the basin of a steel sink.
  • Red onion is generally sweeter than white onion; I use them almost interchangeably.
