Jalapeno Peppers (and Other Hot Peppers)

  • Look for dark-colored jalapenos for the best flavor.
  • Most of the heat of jalapenos resides in the seeds and white ribs on the inside of the pepper.  If you want flavor but not too much heat, remove them by halving or quartering the pepper and cutting them out with a paring knife.  I like to leave about half of the ribs for a little kick.
  • Wash your hands after touching hot peppers, as the capsacin can burn sensitive skin.

Hi there, I'm Matt. I went vegetarian last March, and almost immediately I became a much stronger runner. I recently qualified for the Boston Marathon; now it's on to my first 50-miler!
