Herbs

  • When a recipe calls for fresh herbs, dried can often be substituted (exceptions are noted on this page), but the bright fresh flavors will not be present in the dried.  When using dried instead of fresh, use 1/3 the amount called for.
  • If the stem of an herb is soft (like cilantro stems or the small thyme stems off the main stem), as opposed to woody (like rosemary), it is usually edible.  In this case, I will quickly strip off the leaves and not worry about getting a few small stems along with the leaves.
