Ginger

  • When a recipe calls for fresh ginger, generally don't substitute ground; they have very different flavors and uses.
  • Most of the flavor lies near the surface of a "hand" of ginger; one way to ensure you won't cut away too much is to peel it with a standard spoon.
  • Fresh ginger keeps best in the freezer.
