Fennel

  • Fennel is often referred to as anise in my grocery store, though I believe they're different plants.
  • Usually recipes call for sliced fennel; the way to do this is to cut off the stalks, cut off a quarter-inch thick layer from the bottom of the bulb, quarter the bulb by making two downward cuts from the top, make one diagonal cut in each quarter to remove the core, then thinly slice each quarter.
  • The green "leaves" (called fronds) can be chopped and used for garnish and flavoring.
