- Chipotles are just smoked jalapeno peppers; they have a really smoky, slow-burn heat to them. Adobo is a vinegar-y, sometimes tomato-y sauce that they’re canned with.
- Chipotle in adobo is usually sold in a small can in the Hispanic foods section of the store.
- Many recipes call for the chipotles to be seeded; simply slice them open and scrape out the seeds. Some recipes call for chipotle puree, just put the peppers (and optionally the adobo) in a food processor or blender for a few seconds. It keeps in the refrigerator for weeks and adds a flavorful heat to lots of meals.
