- There's not much agreement about what a "rib" of celery is, versus a "stalk." Generally, if a recipe calls for a rib, I use a piece from the middle of the bunch, called the "heart." These pieces have the best flavor. If it calls for a stalk, I use a larger piece from the outside of the bunch.
- The leaves from the celery heart also have a wonderful flavor and are great in salads and for garnishes.
- Forget about that negative-calorie-since-you-have-to-chew-it nonsense. While you're at it, forget about counting calories and just fill yourself up on whole, healthy fruits and vegetables.
