Broccoli and Cauliflower

  • After trimming the florets off a head of broccoli or cauliflour, the stalk does not have to go to waste.  You can peel it with a vegetable peeler or use a knife to cut four straight sides.  Then slice the stalk into thin squares and cook them as you would the florets.
